Shakshuka
Ingredients
1 can (400g) crushed tomatoes
4 eggs
1 small diced onion and 2 cloves of minced garlic
1 chopped red bell pepper
1 tsp Cumin, 1 tsp Paprika, salt, and pepper
1 tbsp Olive oil
Instructions
Heat oil in a skillet over medium heat. Add the onion and bell pepper. Cook for about 5 minutes until softened.
Stir in the garlic, cumin, and paprika. Cook for 1 minute until fragrant.
Pour in the crushed tomatoes. Let the sauce simmer for 5 minutes until it thickens slightly. Season with salt and pepper.
Use a spoon to make 4 small "wells" or indentations in the sauce. Carefully crack an egg into each well.
Turn the heat to low, put a lid on the pan, and cook for 5 to 8 minutes.
