Spinach Pasta
Ingredients List:
Serves 4
1 pound pasta
250g spinach
1 block silken tofu
3 tablespoons lemon juice
2 tablespoons grated parmesan cheese
2 tablespoons extra virgin olive oil
1 teaspoon italian seasoning
1 teaspoon salt or to taste
1 teaspoon red chilli flakes or to taste
4 cloves of garlic, chopped
1/4 teaspoon black pepper or to taste
Directions:
In a pot, blanche the spinach until wilted and set to cool keep the pot of water for later
Add tofu, the cooled down spinach, italian seasoning, salt and pepper and blend until silky smooth
Using the same water for the blanched spinach and add in the pasta to cook
After the pasta is cooked slightly under al dente, reserve 1/2 cup of the pasta water before draining
In a saucepan, add the olive oil before putting in chopped garlic as well as the red chilli flakes allowing the flavors to bloom
Add in the sauce from the blender allowing it to cook in the sauce pan. Add in the reserved pasta water to make it less thick
Finally add in the pasta and parmesan cheese. Allow it to simmer before turning off the heat
