Will's Embutido Recipe

Ingredients

For the meat mixture

• 1lb ground pork
• 1/2 cup breadcrumbs
• 1/4 cup milk
• 1 egg
• 1/4 cup grated carrot
• 1/4 cup grated onion
• 2 cloves garlic, minced
• 2 tbsp sweet pickle relish
• 1 tsp salt
• 1/2 tsp black pepper

For the filling

• 2 hotdogs, sliced into strips
• 2 hard boiled eggs, sliced
• 1/4 cup raisins (optional)

Instructions

1. Prepare the meat mixture by combining all
2. Mix well thoroughly until well combined
3. Lay out aluminmum foil and spread the meat evenly
4. Place hotdogs, eggs, and raisins in the center
5. Roll tightly into a log shape and seal the foil
6. Steam for 45-60 minutes
7. Let it cool slightly, then unwrap
8. Slice into pieces
9. Serve and enjoy
