Ingredients:
Flan:
- 3 Eggs
- 3 Egg Yolks
- 2.5 Cups of Milk
- 1 Cup of Sugar
- 1 Teaspoon of Vanilla Extract
Caramel:
- 0.5 Cups of Sugar
- Some Water
Instructions:
- Preheat the oven to 350°F (might wanna do this when you are closer to finishing)
- Set the stove temperature to high
- Fry aromatics in oil in another pot
- Pour the sugar into the pan and hydrate it with water (more water = more control, but also longer wait time)
- Stir every now and then until the mixture turns golden brown and the sugar is bubbling
- Pour the caramel into the oven-safe container(s) (be quick bc the longer it is in the pan the bitterer it will get)
- Mix the eggs, egg yolks, sugar, and vanilla extract together in a bowl, avoid making bubbles
- Heat the milk in a pot until some small bubbles start coming to the surface and right as the milk begins to curdle on the bottom of the pot
- Take the milk off the stove and pour it slowly into the batter
- Mix together while avoiding making bubbles
- Sift the batter into the container(s) with caramel
- Fill a baking tray halfway with water
- Put the container(s) with the batter and caramel in the water bath
- Place the water bath in the oven and bake for 1 hour
- Take the flan out of the oven, and put it in the fridge for 45 minutes
- Remove the flan from the fridge
- Place a serving platter on top of the container, cut the edges from the container, and flip it upside down
- Lift the container off and serve
