  1. Preheat waffle iron to medium-high. Lightly oil/grease it.
  2. Mix dry ingredients in a bowl: flour, baking powder, cornstarch, salt, sugar.
  3. Mix wet ingredients in another bowl: eggs, coconut milk, water, oil, pandan, (vanilla).
  4. Combine: Pour wet into dry and whisk until just combined.
  5. Rest batter 10 minutes
  6. Cook: Pour batter into hot waffle iron (don't overfill). Cook until deep golden and crisp for 3-5 min.
  7. Cool for crispiness: Place waffles on a wire rack (not a plate) so steam doesn't soften them.

Crispy edges, soft center, and that pandan aroma is unreal. The coconut milk makes it rich without being heavy.
